Chocolate & Walnut Bottomed Chocolate Chunk Cookies
Ingredients:
Cookie Dough:
- 150 grams all-purpose flour
- 3/8 teaspoon baking soda
- 1/2 teaspoon salt
- 1 stick of unsalted butter
- 100 grams brown sugar
- 75 grams granulated sugar
- 1 large egg
- 50 grams of semi-sweet chocolate chunks
- 100 grams of chopped raw walnuts
Spiced Walnut and Chocolate Topping:
- 100 grams of semi-sweet chocolate chunks
- 100 grams of cooked walnuts from cookie dough
- Cinnamon, to taste
- Kosher Salt, to taste
Procedure:
Melt butter at medium heat.
Once the butter begins to brown, add raw walnuts and continue cooking until golden brown.
Strain the brown butter into a bowl to cool; set aside walnuts for the topping.
Combine the flour, salt and baking soda; whisk to aerate.
Once the butter has cooled, add the sugars and whisk thoroughly.
Add an egg to the wet goods and continue mixing thoroughly.
Add the dry goods to the wet goods in thirds.
Fold in the chocolate chunks.
Cover with plastic and refrigerate for a minimum of 3 hours to overnight.
Preheat the oven to 350°F
Portion the cookie dough onto a cookie sheet and bake for 10-12 minutes, rotating halfway.
While the cookies are cooling, spice the reserved walnuts as desired with cinnamon and salt; spread evenly on the cookie sheet and roast in the oven until deeply browned.
Melt the remaining chocolate chunks in a bowl set over boiling water.
With a spatula, spread a dollop of chocolate onto the bottom of each cookie.
Top the melted chocolate on each cookie with the spiced walnuts and a sprinkle of kosher salt.
Refrigerate for 30 minutes, or until chocolate has set.
Stuff a whole cookie in your mouth while no one is looking and enjoy.
